Marinated Greek Salmon Steaks

This week brought suddenly cooler temps and steady breezes to my corner of Portugal. I found myself parking my laptop in front of our always-open windows, inspired to write cozy holiday menus.

​

Meanwhile, this Greek Salmon Steak made multiple appearances on my table. As an easy dinner topped with the recipe's Scallion Relish and served with Gazpacho Salad. Then flaked and tossed in Tartar Sauce and served over toast. Then folded into an omelet with Boursin. Each one a dream. Salmon steaks are the perfect retro-but-cool-again cut for this recipe, but substitute salmon fillets if that's what you have on hand.
