Hello, Reader.

My family in the midwest is digging out from another week of multiple snowstorms. Meanwhile, here across the Atlantic, we had a small-ish earthquake on Monday, followed by a deluge of rain - and today I woke up to bright skies and the warmest sun.

If your head is spinning (like mine!), I hope this Sunday gives you a pocket of time for some well-deserved rest. We've earned it!

And since so many of you tell me that salmon is your favorite fish, today's note is all about SALMON. I'm sharing two brand new recipes, plus three tried-and-true classics perfect for your week.

5 Weeknight Salmon Dishes

  1. Mediterranean One-Pan Salmon and Rice A perfectly timed one-pot dinner where tender salmon rests on fluffy rice full of green olives, lemon, and garlic.
  2. Classic Salmon Patties with Lemon-Dill Sauce Crispy on the outside, tender inside, these salmon patties get brightened up with a tangy homemade lemon-dill sauce that makes them impossible to resist.
