πŸ₯± The Cure for Fish Friday Fatigue

Happy Sunday, friend.

My little corner of Portugal skipped from spring rains straight to summer this week 😎...and no one is complaining about it. Feels like we moved from cozy stew season to break-out-the-grill literally overnight.

This week I'm hearing from so many of you that by this point in Lent, you're officially tired of frozen fish sticks and the greasy local Fish Fry.

Whether you're observing the last three Fish Fridays or just want to add more seafood to your weeknight rotation, I've got five fish dinners you can have on the table in 20 minutes or less.

Fast + Flavorful Fish

  1. Pan-Grilled Salmon with Herby Mayonnaise - My mayo hack ensures your salmon stays perfectly moist while cooking, then doubles as a tangy tartar sauce for serving – because who doesn't love a multitasking sauce?
  2. Smoky Garlic Butter Baked Trout - This buttery trout gets a kiss of smoky paprika. Bake with mini-peppers for a one-pan wonder.
  3. Broiled Parmesan Pollock - Budget-friendly pollock turns into a bubbling, cheesy masterpiece that'll have even the pickiest eaters asking for seconds.
  4. Air Fried Halibut with Crunchy Almond Crust - This low-carb miracle delivers restaurant-quality crunch in just 10 minutes, proving that "quick" and "impressive" aren't mutually exclusive.
  5. Baked Mahi with Garlic Herb Sauce - This seafood recipe works with whatever white fish is hibernating in your freezer. It never fails!

But if you’re still loving Fish Stick Season…

...try my Impossibly Crunchy Air Fryer Fish Sticks this week.

Happy cooking!

Hello, Reader. We've had a week of warm and sunny days here in Portugal. But when I woke up this morning, the sky was heavy with clouds and the smell of rain is in the air. It's the kind of cozy Sunday that demands something simmering on the back of the stove and a new-to-you British detective series.
