Mediterranean White Fish with Olives

The perfect sautéed fish with a late summer pan-salsa of cherry tomatoes and buttery castelvetrano olives. If you're ready for a new flaky white fish recipe to perk up your weeknight routine, this one is a winner.

I used budget-friendly pollock in this recipe, but feel free to grab cod, haddock, or your favorite mild white fish. If Italian olives are hard to find, tuck into that jar of green olives in your fridge. This entire pan full of Mediterranean magic can be on the table in 20 minutes.
