Fan Favorites: Easter Edition ๐Ÿฃ

Happy weekend, friend.

Easter always takes me back to Sunday mornings in coordinated dresses and hats with my sisters (my brother was equally dapper, but skipped the frills). No matter what our bank account said, my mom turned our kitchen table into a celebration. The centerpiece was usually ham, flanked by sides that made the meal feel abundant. It was an exercise in resourcefulness disguised as tradition.

This year, I'm sharing recipes that honor that spirit of celebration while bringing something fresh to the table - three holiday-worthy seafood mains, plus three sides that might just steal the show. All are beloved by readers who've made them part of their own family traditions. Check out these reviews!

โ€‹Easy Fish Piccata "I first made this for Christmas Eve last year. It was a big hit and now I make it several times a month. This has become one of my favorite recipes." - Lisa A

โ€‹Mahi Mahi in Garlic Mascarpone Sauce "I made this tonight for my birthday dinner! It was delicious! Maybe the best thing I have ever made." - Margaret

โ€‹Garlic Herb Roasted Salmon "Elegant and flavorful. Can't wait to make it again!" - Lynn

โ€‹Brown Sugar Carrots with Orange & Pistachios "This is our favorite carrot recipe! It is perfect just like the recipe, no need for any adjustments for us!" - Vickie

โ€‹Roasted Potatoes with Whipped Feta "This was INCREDIBLE! My family is picky. We made this along side scallops with pea purรฉe, but these potatoes stole the show!!!!!" - Cara

โ€‹Homemade Au Gratin Potatoes "This came out delicious, our family loved it. Will be something we will make again!" - Karen

Here's to a week filled with spring sunshine, fresh food, and the anticipation of a fun holiday weekend. Whether you're cooking for a crowd or keeping it cozy, these recipes are my gift to your celebration.

See you in the kitchen!

blue pot full of Portuguese fish and rice stew.

Easy Coastal Flavors I love traveling, but I also love coming home to our corner of Portugal. This is the dish I can't wait to eat every time the plane touches down in Lisbon. Some version of this saucy, flavor-packed seafood rice is served in nearly every restaurant here. Make it with fish, shrimp, or whatever you find at the fish counter this week. Here's the version I make most often... Portuguese Stew Garlic Shrimp (another Portuguese specialty!) Greek Salmon (make with fillets or...

Mexican Shrimp Caesar Salad piled high on a platter.

Hello, Sunday! This week's star is honey chipotle shrimp that hits every note - sweet, smoky, and a little spicy. I've been making them on repeat because they just work everywhere: tacos, salads, grain bowls, you name it. Keep scrolling for my air fryer fish tacos and the garlicky green sauce every taco truck guards like a state secret. Plus a caesar that uses our Mexican shrimp as the protein, because sometimes the best ideas come from great leftovers. Mexican-Style Shrimp Mexican Caesar...
